Cucumber Tomato Salad

1 Long English cucumber ( or your favorite variety)
2-3 large tomatoes-diced (I used one beefsteak) 
1/2 red onion (my family doesn't care for onions-omitted) 
1Tablespoon fresh herbs (I used parsley and sweet basil)
2 Tablespoons olive oil
1 Tablespoon red wine vinegar (didn't have red-used white)

salt and pepper to taste

Combine all ingredients in a bowl and toss well. 

Refrigerate at least 20 minutes before serving.
